Off Road Cooking: Loaded Pancakes

I had no idea what to make for breakfast this morning. Feeling uninspired I checked my Facebook feed and saw a friend who posted a picture of protein pancakes with a fresh fruit coulie! #yum!
I'm not training like her, and I'm feeding a soon to be one year old so, I made some changes. The ingredients here are so easily swappable. I let my off-roading skills guide me!

Ingredients:
- 1 cup whole wheat flour
- 2 eggs
- 1/2 cup homo milk (adjust runniness of batter)
- frozen raspberries
- fresh blueberries
- left over banana on my counter
- "some of that good vanilla from Mexico" (the Help)
- 1 teaspoon of sugar
- 1 tablespoon of melted butter
- 2 tablespoons of bran/wheat germ
- teaspoon of baking powder 

Mix liquids first, then powders. Whisk everything and ensure consistency is runny. Add in berries and chopped bananas and fold into the batter.

I used butter for my pan, because little man needs his fats!

Voila! For the final product, I dressed the pancakes with greek yogurt and fresh fruit.
By the way, this is a desert plate, the pancakes are small :) I ate two, which was very filling. 

V ate an entire pancake and really loved it. He's in this throwing-things-off-the-high-chair phase right now, which I'm really working hard on. I need to yell at him when I say "no", otherwise he laughs and thinks it's a game. I also tap his hand lightly so he knows he is being bad.
All that to say, between these smiles, were moments of me yelling at him and him crying.

Off Road Cooking: fancy style

Sometimes, you just feel like going fancy!
My husband made dinner the other night. Role reversal is such a funny feeling, and let me tell you, I love it!

Because he works every other weekend, he gets weekdays off as well. On Thursday while looking after V, he made dinner, he did groceries, he did laundry. I am in heaven! I also went to yoga after dinner which was the best way to end my evening... Wait, my shower was the awesome part! Thursday nights are my. "Me time" and I highly recommend you  do the same.

This marks the end of our second week back to work, and I think we will be just fine :)

Here's Michael's deadly cedar plank salmon recipe. It's simply amazing!

- minced red onion, garlic and fresh dill
- salt/pepper

Place a nice crust of the mixture on the salmon. Make sure cedar planks have been soaking in water for at least 4 hours. BBQ the salmon, but don't over cook it!


He served it with BBQ portobello mushroom caps (no seasoning) and I sautéed some heirloom carrots with salt pepper, oil and balsamic vinegar... Soooo good!

Off Road Cooking: asian turkey balls

Before leaving the house, I remembered that I bought ground turkey a few days ago, so I made sure to thaw them for dinner tonight. I am trying to diversify my proteins and add something different in my meal repertoire. I try to eat lots of protein because I like to keep my iron levels up. Protein also fills me up. I know it's good for post-workouts, but that's not my area of expertise, so I won't even go there! 

I see people making these turkey/chicken meat balls all the time in different ways, but I like to prepare them with a fresh asian twist.

I made 2 packs of ground turkey because I find it less filling than beef. I am still learning to use ground poultry and noticed that it's a lot runnier and needs a lot less seasoning (like salt) than beef.

Ingredients:

Asian Poultry Balls (we call them "chicken bo-bo balls" at our house!):
  • 2 packs of ground turkey
  • 2 eggs (for binding and extra protein)
  • 4 scallions chopped
  • bunch of chopped cilantro
  • 1 inch grated fresh ginger
  • 2 tablespoons of garlic chilly sauce
  • 1 tablespoon of soya sauce
  • 1 tablespoon of honey
  • 1 teaspoon sesame oil
  • sprinkle of sesame seeds
  • 2 squirts of Worcestershire
  • 1/3 cup of wheat germ mixed with bran instead of breadcrumbs
  • Salt, pepper
Mango salsa:
  • 1 cubed mango
  • 1 diced tomato
  • half a jalapeño chopped up in small cubes
  • half an onion chopped finely
  • a splash of red wine vinegar
  • chopped cilantro (I didn't have any left)

Place all the ingredients in a bowl, and get your hands dirty! (or use a spoon)
Added the honey and sesame after I mixed it… got creative on the way :)

Placed little balled on a baking sheet. Baked for 20 minutes at 375C

Made a fresh mango salsa to serve with the meat balls.
Steamed broccoli to finish it off!
Victor really liked his dinner tonight. He particularly liked holding the broccoli and eating the stem. The salsa was really nice with the turkey balls, it added a nice fresh component to the meal.

Baking Momma: Chocolate Zucchini and Carrot Cake

Tomorrow I am getting ready for Victor's Cake Smash Photoshoot for his first birthday!

So, why not attempt to make a healthy version of a cupcake, while he is innocent and can't tell when something tastes "too healthy". Typically, Chocolate Zucchini and Carrot Cake taste really good, but when you put less sugar, less butter, add more veggies and use whole wheat flour… well… it doesn't exactly taste the same ;) haha

I also pretty much dumped an entire bottle of red die to make "red velvet"… but it didn't really work. I must be doing something wrong. Maybe I should use a gel dye?

to make such rich frosting without changing the ingredients.

Off Road Cooking: deconstructed nachos

Cubed tomatoes, avocado and cheese, with greek yogurt and feel puree.
I made this for V tonight. He loves the cheese, avocado and tomato. Not a huge fan of the meat and yogurt, although he ate most of it.

Meat will be a challenging food to feed V until he has a few more teeth to help him chew. I'll have to find other ways to prepare it.

Any advice for a momma in need? Do all babies prefer chicken over beef? I know V does! Leave your comments below :)

Off Road Cooking: New teeth, new texture

Of course, as I settle into a routine and get comfortable cooking for him, V has to change it up! I was wondering why he was rejecting the last few meals I was giving him. Then it dawned on me when I was at a baby group and saw other kids eating cubed food… DUH! V is ready to chew with his new top teeth!

Now the challenge is, what do I feed him that he can chew, while maintaining the nutrients he requires? I put my creative "Off Road Cooking" hat on and came up with this: Spinach, mushroom and cheese omelette with cubed avocado.

He really loves chewing his food. Feeding takes three times as long now and you really have to watch for choking. Oddly enough, V doesn't put things in his mouth (like toys), which means he needs me to feed him because he doesn't know that he can put the food in his mouth :( He also prefers that I feed him with my fingers rather than using a spoon... Mr. Picky!

He is slowly learning to touch and pick up the food with his delicate hands (even if he ends up squishing it in his palms). V is also learning to use his sippy cup… he knows how to drink from it, and is working on holding it up himself. Warning- it gets dirty! I need to let go of the "messy"factor and just let him be a kid. I never realized that I am such a clean freak when it comes to baby mess. 

I just love watching V when he eats. His little mouth moving in new ways to accommodate for front teeth chewing, his dextrous fingers picking up small slippery food. I think because he is at eye level with me, it's a new angle that allows me to observe him closely. The high chair is also a great spot to teach things like "hands up" (baby hands up…) and "clap" because you have their undivided attention. V is getting really good at both.

Off Road Cooking: Cooking for Baby 101

Ok, so I have been posting lots of meal ideas that I have made for little man, but didn't realize that I might have to back it up a bit. Read about my first ever "Off Road Cooking" post here!

I dedicate this post to explaining how I go about preparing meals. I have it down to a very simple process that literally takes minutes :)

Note that I make fresh food every 4 days or so. I don't freeze food because I do not have a microwave at home. Now you are wondering why I am a crazy person who doesn't own one... Well, I get enough wave exposure at work when I heat up my leftovers and I have a small kitchen. Plus, we don't use it much anyway. I am not a huge fan of what it makes the food taste like either.

Ok, let's get started!

You will need:
- small saucepan with lid
- baby bullet, food processor, blender or hand blender (or elbow grease and a potato masher! haha)
- small containers to store food (like Baby Cubes)
- sharp knife and cutting board

Ingredients:
Meat- chicken breast, leg or thigh, turkey, pork tenderloin, beef sirloin, salmon fillet, egg (I use the entire thing, although some say not to give the whites before 1yr)
I usually buy what is on sale, because this is the most expensive part of groceries. I like to use lean meat because it cooks nicely and boils well. You usually have no ligaments or stringy fatty tissue that would be difficult to blend.
I always use a tendoriser when I boil meat, not MSG!! I'm talking garlic, onion, leeks, chives.
I also use flavours, consisting of fresh herbs (basil, parsley, sage, thyme, oregano, cilantro)

Fats- olive oil, cheese or butter
If something is too lean, you can always ad some flavour with butter or cheese. It also helps to smoothen the texture if you find it dry.

Vegetables- ALL
Fruits- ALL
Fresh produce is NOT expensive! I hate it when I hear people saying this. If you stick with what is in season, go to markets or farms directly, and if you buy what is on sale or featured, you will be just fine. Make sure you get a variety all the time and try to buy something new that you never used before or often (ex: okra, eggplant, artichoke, gourds). For these specialty items, perhaps wait until they go on sale :)
I also recommend having basic items stocked in the fridge like potatoes, carrots, onion, garlic, lettuce/spinach/kale, tomatoes, cucumber, avocado, lemon, broccoli/cauliflower (always have enough to make a salad). For fruits I always need banana, apple/pear and maybe grapes. If I am out of these, I definitely need groceries!

Grains- brown rice, quinoa, lentils, barley, buckwheat, beans, cracked wheat (bulgur)
Always have these grains in your pantry. They are handy if you don't have meat or protein at home. They also provide  nice way to thicken any dish.

Flavour- fresh herbs for savoury dishes, cinnamon and nutmeg for fruit compotes and garlic, onion, leeks, chives, mushrooms for umami!

Cooking meat:
Take your saucepan and roughly chop about 1 cup of meat. Add about half a cup of water, a quarter cup of onions (or other suggestion above), a tiny bit of salt and pepper and maybe some fresh herbs if you have any. Cover and let it boil at a medium heat until meat is soft and cooked all the way through.

Blend with your tool of choice. Add water or milk if needed. You may also add butter or cheese to thicken and smoothen.

Fill your containers and let cool before placing in the fridge/freezer.

Cooking fruits or vegetables:
Roughly chop any combination of vegetables or fruit, about 2 cups worth. Add about 1/2 cup of water and let boil at a medium heat. Don't over boil the vegetables/fruit, it's almost steaming them to ensure that you don't lose all the nutrients, but they are soft enough to blend.
You can add a tiny bit of salt and pepper, herbs or anything above that adds flavour (like onions, leeks…) to your vegetables and cinnamon/nutmeg to your fruits.

Blend with your tool of choice. Add more water or milk if needed. You may also add butter or cheese to thicken and smoothen.

Fill your containers and let cool before placing in the fridge/freezer.

The philosophy behind "Off Road Cooking" is getting used to being creative with what is in the fridge. We don't always have time to do groceries, but you should have enough basics in the fridge to make a healthy meal, even if it is a simple one. My "Off Road Cooking" posts are generally not planned but something I whipped up that day. Sometimes I get inspired by traditional dishes and I make them baby friendly (Thanksgiving meal or the Baby Borscht).

Off Road Cooking: a fancy feast

Some dinner inspiration for you all!

I haven't been home for a few days and today I decided to dedicate myself to little man's nutrition! We were visiting a friend in Thunder Bay and I fed V more store bought baby food than usual (Baby Gourmet is the brand I go for) which gave him terribly smelly number twos (sorry for the over share). I think this is why I felt compelled to cook up a storm.

I made him a very gourmet dinner which consisted of a three course meal:

1- White: Boiled chicken with onions, fresh parsley, sage and goat cheese
2- Red: Boiled beets with kale, red onion, lentils and zucchini3- Yellow: Boiled pumpkin, leeks, celery, and carrot with butter

Needless to say, little man gobbled this up. The entire thing! What a piggy. Sometimes he's a bottomless pit. He never says no, so I don't actually know what his maximum capacity is.

Off Road Cooking: Ghoulish Inspiration

Boiled beets with red onion and brussels sprouts… baby Borsch!

In the spirit of Halloween, I decided to use beets for little V's next few meels. I love using seasonal produce, which is great on the wallet!
Beets are so amazing. Naturally sweet, full of antioxidants and high in fiber which is great for the digestive system.

I won't give him this everyday, because it can be a little too much for his number twos.
As I was cooking, I noticed the gorgeous colour staining my cutting board and thought... What a bloody mess? ( hehe pun intended!)

Momma's night off: Food Network Chef Bucket List

I love The Food Network. I have been watching it for over 10 years now, before it became a hipster thing. That's how I learnt my confidence in the kitchen and of course where I was able to unleash my creative cooking. I have had the chance to meet some of my favourite chefs like Michael Smith and Chuck Hughes, and now I can add Janet Podleski to my list!

I asked my brother in law to look after V tonight so I could attend this free talk. Janet talked about the Looneyspoons story and the struggles they had to overcome to reach to the level of success they are at today. She also did a small Nutrition portion to the presentation which had very smart and obvious messages like:
  • Eat real food, not processed food
  • Avoid sugar and bad oils
  • Be positive about your image and encourage yourself to eat well

Off Road Cooking: Gourds are gourd for you

Following my October post, I thought it would be nice to show you what I've been stirring up in my baby kitchen these days!

Victor is really loving gourds, who doesn't. I particularly love cooking with pumpkins or butternut squash. Not only are they delicious and creamy, they cook so fast and they are easy to cut and peel (I use a peeler). As you all know, gourds can be intimidating to cook with because the skin is so hard and bumpy. An easy trick is to use a good sharp knife, preferably with a ceramic blade. You can cut it in half, remove the seeds,  bake it first and peel the insides, or simply chop it up and steam. I have seen gourds being sold in cubes at the grocery store which is a nice way to eat healthy, save time and avoid the intimidation. Listen, I am all for short cuts, if the end result is worth it.

Last weekend, Victor ate his first traditional Thanksgiving meal which consisted of mash potatoes, turkey breast, brussel sprouts, stuffing and a teaspoon of cranberry sauce. He LOVED it! I brought the baby bullet at the in-laws since I had been anticipating this day for a while now. It was nice to have the evening off in the kitchen. When it came to desert, I felt bad watching V stare at my homemade pumpkin pie, so I gave him a bite of the middle... his arms kept flapping in the air while he rolled his wrists, which is the symbol for "YUM, I WANT MORE!".

Poor thing, I wasn't going to give him more sugar desert, but I did make this for him... my version of Baby Apple Pumpkin Pie.

Off Road Cooking for Little Teeth

In the Beginning

So, I realize it's been a long time since my last post, but between taking care of my little man, going back to work, trying to have an awesome summer and keeping up with the house... needless to say I have been busy!

My little man officially has his two bottom teeth at 6 months and is now eating three square meals a day and has a huge appetite! Finally, I can cook for him :)

So, here is a bit of backgrounder information. Little man, a.k.a V, never latched when he was born, which made breastfeeding difficult/impossible. I used a shield which messed up my supply and kept up my puny flow pumping every 3 hours ( or when I found the time). I saw 3 lactation consultants, talked to every mom I knew, visited the lactation clinics, read books, watched youtube videos... I did MY best. Until this day, I feel like I have to explain my entire story because I feel judged that I had to formula fee my baby, while supplementing him with my breast milk for the first 2 months of his life. Yes, I could have pumped for longer, and bless the women that do... I just couldn't do it, while keeping my sanity. In the end, V is a thriving and healthy baby boy who as it turns out LOVES eating solid food. He was a natural right from the beginning.

Since he was born, I couldn't wait to feed solid food to my baby. Not only do I love cooking, but I wanted to give V a second chance at nutrition and do this the right way!

Off Road Cooking- A Bumpy Start

So, as much as I was anticipating cooking for V, I was so nervous as a new mom, what with all the rules and guidelines for feeding babies. No peanuts, no egg whites, no dairy.... I started adding rice cereal to his milk at about 4 months. At 4.5 months, I gave him his first bite of rice cereal and he ate it up like a champ! No spitting it out with the tongue. Just a straight swallow! I gave him rice cereal and banana for the first bit, once a day. He was young and I wasn't sure what I was doing. I wanted to make sure he was still drinking all the milk that he should be. I also gave him prunes which helped with digestion and #2 :)

Finally 5 months came around and I felt better giving him a larger variety of food. At first I was against store bought food. There is NO way I am giving him processed food! He is formula fed, the least I can do is make him delicious nutritious gourmet food! Right? Wrong! I bought some baby food and out of convenience started giving him the store bought cooked veggies and meat.

I unpacked my baby bullet and was amazed with all the accessories that came with it!
STOP! What on earth am I doing here? I just said that I wanted to give the very best and give him a second chance at eating healthy! The veggies in the garden are blooming and this is the promise I made to myself! This is the moment where I went to the basement and dusted off the "Baby Bullet" that I got as a gift and thought I would never use. I also started reading a baby cook book that I received as a gift, which really helped to inspire my culinary fire!

Turns out, V hates store bought food. I think it's way too bland and lacks flavour. So it was time for me to roll up my foodie sleeves and make the baby food I have been dying to make!

I of course started with fruits and veggies, even though meat is recommended. The way I see it is that Formula contains so much iron, my son is not deprived of it. If I were strictly breastfeeding, then I would have introduced meat right away.

I started with plain food like avocado, steamed/boiled sweet potatoes, carrots, peas and chicken. I know you are supposed to wait a few days to check for allergic reactions before giving new food items...but I didn't. V just loved eating and wasn't showing any bad signs, that I quickly found myself making mini purees that consisted of a mixture of grains, veggies and meat. I also loved making fruit compote with a medley of seasonal fruits!

A little info about flavour- As it turns out, I have been using lots of different things to flavour the food that I make; onion, celery, sage, basil, parsley, cinnamon and a tiny bit of salt for meats. I truly think this is what makes the difference in the food. When I taste the food, I find myself loving it, and no wonder V does too! I also noticed that he loves meat in his food... he is definitely my son ;)

Find your Routine

V now eats 3 meals a day which consists of Oatmeal with fruit for breakfast, 2 snacks for lunch (yogurt and avocado or small dinner with fruit) and dinner always consists of a hearty meal that contains meat, veggies and a grain/starch.

I think we were so lucky with timing because the veggies in the garden are coming out and the Ontario produce are ready!
Don't forget to explore with starches, legumes and grains like Yucca, parsnip, sweet potato, quinoa, cracked wheat, barley, lentils, chickpeas and beens.
